Recipe by Hannah Rose, aka @_HannahEats

What you need for the brownie:

  • 1 egg
  • 50g of oat flour, (Hannah used Mornflake oats and ground them to a flour)
  • 100ml of Oatly chocolate mylk
  • 50g of yogurt
  • 25g of That Protein cacao and brown rice protein powder
  • 20g of coconut sugar

Simply mix all of the ingredients above together and then bake the mixture for 10 minutes. Leave to cool fully (to avoid melting ice cream!) on a cooling rack.

What you need for the cookie dough:

  • 50g of coconut flour (Hannah used Sukrin)
  • 20g of coconut sugar
  • 1 egg
  • 20g of melted coconut oil
  • 20g of butter (Hannah used Koko but you can use any)
  • 50g of liquid egg whites
  • 2 squares of cocoa plus high protein chocolate chopped in to chunks

Mix all of the above together with around 50ml of water and then bake in the oven for 20 minutes. Again make sure you leave this to cool completely!

To make the sandwich put the brownie layer back in a greased tin and then spread a tub of Oppo Salted Caramel over it. Then place the cookie dough layer on top and put it back in the freezer for at least four hours.
