Goodness Guru got creative with her tubs of Oppo this week. It's safe to say she got all our mouths watering with this awesome recipe. Press the magic button and in minutes you’ve got a warming salted caramel pudd. Pair this with a scoop of Oppo Salted Caramel ice cream for the ultimate indulgence.
Ingredients (to serve 4)
• 410g can of chickpeas in water
• 8 dates
• 2 ripe bananas
• 2 tsps cinnamon
• 1 tsp vanilla
• 1 tsp baking powder
• 2 tbsp peanut flour
• 2 tbsps Macadamia nut oil (or any vegetable oil)
• Generous pinch salt
• 1 tub Oppo Salted Caramel ice cream
• Raspberries to decorate
Add all the ingredients to a food processor and blitz into a smooth cinnamonny batter.
Add tablespoonfuls of the mixture to 4 medium size mugs and be sure to push it down into the edges.
Place the mugs in the microwave and cook for 2 and a half minutes. Have a check on your mug cake, and then cook for a further 30 seconds if necessary.
The mug cake is ready when it rises a little and a skewer inserted comes out clean. Cooking time will vary according to microwave and size of mug cake, but be careful not to overcook or it will burn.
Spoon huge scoops of soft Salted Caramel Oppo ice cream a top the warm cakes, decorate with a raspberry for good measure and tuck in.
