What You Need:
- 2 peaches or nectarines
- 1 500ml tub of Oppo Madagascan Vanilla Ice Cream
- 1 small handful of fresh mint
- 1 small spoonful of honey
How To Make:
- Use 1-2 peaches or nectarines per person.
- Remove the stones and cut into eighths.
- Place in a roasting tray and cook at 180°C for 20 minutes until soft.
- To serve, place the slices in a bowl, add a couple of scoops of ice cream and a little shredded mint.
- Drizzle with honey.
